Is it true that the only way to carry a rabbit is by their ears?

That's an old fashioned way of grabbing a rabbit. It stops them biting you but it is painful and damages the ears.

To pick up a rabbit, put one hand under the back feet and the other hand under the chest by the front legs.
 
I don't know what you mean by this statement.

No, carrying rabbits by the ears can actually result in injury. This is a short video I watched when I first got a rabbit on how to pick them up.
