What are you cooking?

Having a couple of hotdogs with baked beans. Like a chili dog but with beans instead of chili. Not actually hotdogs as they are really kielbasas links done like hot dogs instead of in a loop. This will go on potato buns. Probably the same tomorrow followed by a rib eye steak on Monday for Memorial Day.
 
I made a bunch of potato salad & baked beans to go with hot dogs tonight. Beans freeze well so we'll have lots of extra. Even though it seems like a lot of potato salad, it'll be gone by Mon. Corn on the cob tomorrow & Mon. to go with burgers? Grilled chicken? TBD...
 
For those that do, what is your Memorial Day menu?

For me the only thing I know for sure is that a pound of bone in rib eye will be involved. ;) Left over meat may become Stroganoff and the bone will go in bone collection in my chest freezer to make future stock for beef stew.

Just not sure what else yet. There will be taters and a veggie but not sure what. I don't have any baking taters but DO have several kinds of baby taters. I could do several baby red taters roughly smashed and buried in butter, sauteed onions and shrooms and topped with sour cream with, probably, Brussels sprouts on the side. Other tater possibility is mashed, with skin, baby reds with corn mixed in with the mash and then, again, the onions, shrooms and sour cream. Nice thing about this is I don't need to plan as I'm just cooking for myself. I'll just have what I feel I want when I start cooking.

I usually eat a vanilla yogurt for dessert to put out the fire. ❤️‍🔥
 
LOL! Ever have this problem?

I have a 7.1 cubic foot chest freezer that is full to the point that I have to dig a bit to find stuff. Also have a full fridge. Problem is, even with all this food, I have zero idea as to what to eat. Mayhaps I'll just order a pizza. ;)

Hmmm, I DO have a little left over sketti sauce and enough meatballs along with pizza dough and shrooms and onions. Could be a calzone or stromboli but I'm missing bell peppers...

Ahhh, dinner solved! Just put in a small order at my grocery that will be here in 30-40 minutes. Got me some burger buns in the order. Dinner will be a bacon cheese (Swiss) burger with pasta salad and mayhaps onion rings.

Grocery order is smaller than usual but enough to still get free delivery.
 
A mix of chicken and pork for a Polynesian lite jerk with bell peppers and onion.. May seem odd but the side will be mayo based pasta salad with hard boiled egg and bacon. One of those things that is as good cold as hot so I'll just nibble for a while. ;)
 
Oops, we're having baked beans & hot dogs again. I was going to make pot roast but I cleaned 1/2 our house, did a bunch of laundry too & I'm tired. Maybe tomorrow...I need some carrots!

Nothing is easier than making hotdogs and baked beans. Broccoli for a side would be a healthy add-on.
 
A feast tonight. ;) Chicken breast stuffed with spinach, artichoke hearts and cheese. To go along will be bread dressing/stuffing and some left over Brussels sprouts. Haven't had bread stuffing in ages but love as long as it isn't cornbread stuffing. May even toss a bit of cold baked beans on the plate.
 
Made my old stand-by dinner. Spaghetti with meat sauce, a nice salad, and a glass of milk.

Just curious... What is your favorite steak cut?

For me it is a rib eye with good fat marbling for flavor.

My least favorite is is filet mignon do to the total lack of fat marbling for flavor. I mean you have to wrap a filet in bacon to have any flavor and then you are tasting the bacon, not the steak. Cook long enough to crisp the bacon and the filet is over done. Cook the filet to medium rare and you have sloppy, mostly raw, bacon which is pretty gross.

Actually, as to flavor, I also like flank/skirt steaks due to their being high in flavor but you need to know how to cook and, as important, how to slice.
