What are you cooking?

Monday June 15th is National Lobster Roll Day. I've been celebraing for the last 3 days having eaten 4 super large lobster rolls. I have one left for Monday to properly celebrate National Lobster Roll Day.
 
Pizza tonight but not delivered, home made. Not totally round but, basically, a 14 inch pie.

Under the cheese cover is a base of a small amount of red sauce and broken up meatballs. Over that are black olives, red onion, bell peppers and a cheese blend with a dusting of garlic powder and basil and another light layer of the cheese blend to lightly cover. Wish I had some spinach and feta cheese but it will still be good.

Here is the thing raw and ready for the oven but letting it sit for a while to let the yeast act a bit more. Will sit 30-60 minutes. Sort of looks like the crust is already cooked but its not. It is a whole wheat dough so looks darker even though raw.

If you guessed LOBSTER you are correct.
For the fourth day in a row, I am having lobster rolls thanks to the 3.5 pound hard shelled lobster I bought on sale , These are my 5th and 6th lobster rolls of the week. I made it on toasted and buttered hot dog rolls. I mixed the lobster from one huge lobster claw with mayo and lettuce.

Cheers, Fishmanic, to your lobster roll & holiday! I've never had lobster at home & rarely out. My husband doesn't eat fish or seafoods ;(

My selfish sometime food was scallops for lunch. I loved the little bay 1s best, but any were great sauted in a little butter & olive oil with just a tiny sprinkle of salt or seasoned salt

Crust is from Albertson's deli; comes as a ball in a plastic bag.. The rest is home done.

Actually the pizza crust might be Safeway. Some years ago we had a Safeway and Albertson's here. Safeway sold out their store to Ridley's and Safeway took over Albertson's. Albertson's remains with the same name but was remodeled to look like a Safeway. Albertson's is the parent company of Safeway.

If you find the crust at a Safeway I would not be surprised as Safeway and Albertson's are actually the same company. LOL! If you find that bagged ball of dough in a Safeway it is really good and quite gluten high. Have to coat your hand with olive oil to get it cleanly out of the bag.

I don't care for lobster or even crab with exceptions. I DO like a real crab mayo based crab salad. To me lobster and crab are like a filet mignon where you have to add to give flavor.
 
That is 1 thick onion slice! Maybe you need a change from just lobster rolls, may lobster bisque? A friend brought it over once when husband was away & it was yummy!

Jay, I'll try to remember to look for ww pizza crust at Safeway. It sounds good but usually not on my radar.

We're having big salad & maybe grilled cheese on rye.

If your store is set up the same way, which is likely, face the deli meat counter where they slice meats and have pasta salads and such. Just to the right would be an open cooler section. Look at the top left of the open cooler. Don't look for a formed crust. The dough is unformed and just a one pound ball in a plastic bag. Both the white and whole wheat dough is good.
 
I guess we've decided on burgers but dang, your steak looks good! I would almost need sautéed mushrooms. Broccoli looks good too, it's going on the grocery list.

A neighbor gave us a big bag of apricots today before the squirrels ate them all. They're quite small & not all ripe; that's good since there must be at least 4 dozen!! Now I need to think of what to do with them. Jam? Pie? Apricot upside-down cake? Crisp? Apparently, our town was known for (black) walnuts & apricots back in the day. Picked ripe they don't keep long but they discovered a nearby sulfur spring that helped preserve them. Now I understand the "unsulfured" dried fruit & it is much better! My husband had never had fresh apricots before !?!? I buy them sometimes; he likes peaches & now likes apricots too...We've been married for 49 years but still find out new stuff ;)
 
Huh. Out here we don't throw apricots into sulfur springs. We throw in people and charge them for the 'healing properties.' Add a little mystical Indian lore and they can charge double.
And I vote for jam. It ships well. You know, to certain people that can't cook. 😉
 
Had planned on just throwing some Tyson chicken tenders and seasoned fries in the oven but, as often happens with me, it will be a stir fry with the tenders adding broccoli, bell pepper and onion finished with sweet/tangy Beijing sauce and tossed with egg noodles although I may use orange sauce instead of the Beijing depending how much spice heat I end up wanting. Might even julienne a carrot to toss in.

I don't even bother trying to do oriental sauces from scratch anymore as I'm just bad at it. I can sort of do but just not like real oriental. I use Panda Express bottled sauces that my grocery carries. If you don't know, Panda Express is a fast food oriental place that has some of the best sauces I've had. Actually their bottled sauces are better than a medium high end oriental place right across the street from my apartments. I use five of their bottles. The orange sauce has the highest spice heat and WILL leave a 'burn' on your tongue. Their sweet pepper and Beijing sauces are similar as to spice heat but are just di8fferent in a subtle way. I also use both their straight Teriyaki which has just a touch of heat and their Mandarin Teriyaki which is pretty sweet.

Oh, if available where you are and you want to try Panda Express's sauces, be warned that they are a bit concentrated and strong. Think of what you need and cut in half.

Funny you'd mention it; I had Chinese yesterday. Strawberry chicken, fan tail shrimp, egg rolls dipped in their hot mustard which literally goes straight up your nose! I can barely stand it but I love it anyway.
I've never been to a Panda Express, drive through Chinese just seems weird somehow. I have seen their sauce in the store so maybe I'll give them a shot. But not the orange sauce. I'm a wimp when it comes to the hot stuff.
