Did the dry brine overnight last night, now I have the rub on--Meathead Goldwyn's Memphis Dust, and both 7.5# shoulder chunks tied. Tomorrow they go on the barrel smoker.
Also watch out for the sweet pepper sauce as it also has a bite.Funny you'd mention it; I had Chinese yesterday. Strawberry chicken, fan tail shrimp, egg rolls dipped in their hot mustard which literally goes straight up your nose! I can barely stand it but I love it anyway.
I've never been to a Panda Express, drive through Chinese just seems weird somehow. I have seen their sauce in the store so maybe I'll give them a shot. But not the orange sauce. I'm a wimp when it comes to the hot stuff.
There is an oriental place right across from my apartment but I haven't ordered any of their takeout in years. Problem is that one time it will be great and the next nothing but bean sprouts. A place has to be consistent.What am I cooking tonight? Nothing. I got chinese takeout. I ordered Kung Poa chicken. I’ve been a lover of Kung Poa Chicken for years. But I was dissapointed with the way the restaurant prepared it. Kung Poa chicken is supposed to be very spicy with chili pepper and peppercorns. The restaurant must have a new cook as my order was very bland. The veggies were fresh and chicken was tender but the dish had zero spices.
Well, I decided to “kick it up a notch” by adding hot chili powder. BAM…. the dish is now very hot and spicy- just the way I like it!
