What are you cooking?

I'm making "real" Spanish rice. No mix, lol. Ground beef, onion, green pepper, crushed tomatoes, zucchini, crushed red pepper. I use brown rice these days, so I add extra water & cooking time. Husband is playing music for me to chop to, good man!
I LOVE Spanish rice but make it a bit 'spice hot'. Makes for a great base for burritos, stuffed peppers and just a bowl with chopped up chicken in a bowl. To be honest I have never done from scratch but RiceARoni Spanish rice is really quite good as a base.

Tonight it looks like I'm going to have 'dirty rice' with chopped chicken. Might even add some crispy bacon for texture.
 
Bah, we're having a frozen pepperoni pizza. I changed water & cleaned a couple filters today. That counts as a day's work ;)
 
I need a good salad but a 'dinner salad', not a side. I'm talking ice berg and Romain with some red cabbage. Crumbled crispy bacon, shredded carrot, onion, bell peppers, ham turkey or chicken as a protein and hard boiled egg... A dinner salad. ;) Pretty much any red salad dressing is good with me; Russian, Catalina or a spicy French. Been a long time. I really need such a salad. :)

Left over red cabbage would end up as a slaw.
 
Our version of a side salad is romaine, grape tomatoes & maybe carrot, spinach, cabbage, napa or red, is nice too if we have it, etc. I may have mentioned the Olive Garden Italian dressing deal, we'll be having that for a long time :) Lemon, garlic & balsamic vinegar also works for us. Sometimes I just use rice vinegar. Cheese makes it more deluxe but not with au gratin potatoes.

Tonight the ham almost had a "maple" flavor, not as salty as sometimes, yummy!
 
Went to my niece’s house for a family holiday dinner. We had stuffing chicken wrap with green beans and carrots. It was delish. They had extra so I took a full dinner home to have Thursday.
 
Preparing for Easter tomorrow, the wife came home with a salted caramel ham. Hmm.
Tonight, I'm grilling some cheeseburgers on the grill because it's so nice out. I'm also making Gurkensalat, which is a German cold cucumber salad.

Hello. Well today, we're having pizza. We make our crust from scratch using our secret cauliflower recipe. No flour crust in this version of an all time favorite. We're including black and green olives, onions, green, red and orange bell peppers, peppercheenies, tomatoes and some lowfat cottage cheese. We'll add some firm tofu toward the end and make everything nice and thick. Bake to allow the cauliflower to get real crispy. You can definitely have more than one piece without feeling a bit guilty.

We had Thai take out yesterday, pumpkin curry with chicken & shrimp for me, basil beef for my husband. I usually get dibs on all leftovers :D so I had some of each for brunch & late lunch. We're thinking nachos for dinner
 
Hello again. Tonight, we're having avocado toast. Avocados on top of home made multi-nut and grain bread. Sides of raw mixed vegetables, like cauliflower, broccoli, cherry tomatoes, green olives, black olives, mushrooms, onions and some cottage cheese on top. For dessert, sliced Cosmic Crisp apples and bananas. So tasty and so good for you!

That is the first healthy meal I’ve seen posted on this forum in a long time.
 
Hello again. Eating healthy is a lifestyle. For my wife and me, we're into our 70s and eating right is like taking a shower. You just automatically do it. Weight management isn't easy, but nothing worth having really is. Someone told me many years ago. "Think about the body you had in high school. Then, what makes you think you can't still have something very close to that body?" The only thing standing in your way is you. If you want something badly enough you'll work toward it. Now, I don't believe eating right is going to result in a longer life. The powers that be have already made that decision. What I will say is that if I take good care of myself, the time I have left will be quality time. We have a lot more years behind us, then years ahead. However, we'll make an all out effort making those few that are left good ones. That means being able to get around pretty much as we did when we were in high school. Just maybe not quite as quickly!
