What are you cooking?

We like spinach in all forms; fresh, frozen & even canned. Fresh in salads, frozen in casseroles & canned as a side (with cider vinegar for me. Yeah, I know slimy ick, lol.) Fresh can get yucky before we can eat a giant bag of it. Do you, as a single person, eat it fast enough?

It may be worth a short trip to Trader Joe's soon, they usually have it. I'm thinking your town doesn't have a TJ's? Our local Safeway doesn't carry it, at least when I've looked. But it's smaller store, still, they have some larger stores near us.
 
Something many don't know about spinach. It has an enzyme that prevents it from being digested properly. It needs heat to get all the good stuff out of spinach. Has to be at least wilted which is still fine for a salad.
 
Tomorrow im not cooking anything for the game.
I bought veal parmigiana with ziti. I ate half yesterday and will finish the rest before sunday’s patriots/texans game. Got to get my energy up for the grueling game.

Having the chicken Alfredo with broccoli I was considering a couple of days back.

Keep in mind that I like to eat and come up with some odd thoughts that I never actually do. That said I have to wonder how left over chicken Alfredo would do in a Quesadilla... LOL! Yes, I would probably not use pasta. ;) Hey, I took a look and here is a recipe for exactly that.
 
Ha! I was thinking about chicken Alfredo for tonight too. I don't care much about pasta shape, nothing too thick, but even egg noodles in a pinch. I wish I had some frozen spinach to throw in sometimes. Husband is a bit iffy on broccoli in some things. As a side or in stir fry, yes...he's come a long way, lol, a reformed broccoli hater.
I have to agree on the shape of pasta. My preference for fettuccine or linguini for Alfredo is mostly due to tradition. Actually my favorite pasta is medium shells as they are like little spoons holding the sauce. For dry boxed pasta my go to is Barilla.

Still all pasta is not equal. When I lived in Florida there was a produce place right across the street from where I worked. Best bought pasta I've ever had as they made and sold fresh. They put all sorts of spices and even fruits in their pasta. One of my favorites was their pasta that was infused with raspberry for a fruit pasta salad. Good stuff!

There are only two times you can add flavor to pasta. One is when the pasta is actually made. The other is when cooked. I will sometimes do my pasta water with several spices and let simmer to infuse the flavor of the spices. When actually cooking the pasta it will absorb some of the spice in the water. It REALLY can make a difference in taste.
 
We're thinking "deluxe" salad might be good enough for dinner during football. Romaine, grape tomatoes, cheddar, pinenuts, & "pretend croutons" (toasted wheat bread, lol). Dressing maybe ranch for husband & lemon/garlic/olive oil w/balsamic vinegar for me. I'm having hunger pangs but we're barely into the 4th quarter...brunch was a long time ago!

That cauliflower is actually called Romanesco! It looks like something from another planet because of those patterns, but it tastes like a mix between broccoli and regular cauliflower.
If you have more left, try roasting it with some olive oil, salt, and maybe a squeeze of lemon. It gets a nice nutty flavor that way. Great find!
 
Of course, with me, this could change in an instant but I think I'll be doing my bacon and pancake experiment. Crisp bacon broken up and added to pancake batter and the pancakes cooked in the rendered bacon fat. Should end as a somewhat savory pancake but still on the sweet side. Might even add a bit of basil to the pancake batter.

So here is how I see putting it together. Can't remember what it is called but is a 'thing'. A stack of cakes with a runny yolk egg between the layers. On the side a couple of breakfast sausage patties. Syrup over it all. For some the syrup may be off putting but I will always dip bacon/sausage in syrup so why not? ;) May do some home fries on the side Home fries would include onion and bell pepper
 
Black Bean Soup recipe I got from Jacques Pepin off TikTok :) Made my Colombian wife happy. Interesting thing in the video- Jacques shows a way to serve the soup with banana. My wife eats a lot of soups with banana. I always found that odd, but it's a Latin thing. Jacques' wife is Cuban, it seems.
 
Indoor burgers with onion, pickles, romaine & mustard. Lesser than grilling but the bottom of our grill rusted away :( & I don't want grease dripped onto the patio :mad:
 
Tonight I'm having a couple of spoiled kids..... OK, really I'm having Brats sausages with sauteed yellow bell peppers, red onion and a couple of tablespoons of sketti sauce just to add some tomato. Will be on potato hoagie rolls. :)
