What are you cooking?

Well, I finally baked my half ham with pineapple on top & roasted potatoes, carrots & onion yesterday. I cut up the rest of the ham to freeze today. My arms & back are tired, Husband was a bit disappointed I didn't make au gratin potatoes tonight :rolleyes: Yeah, right! Part of an Xmas hoagie & a glass of wine was what we had lol.
 
Ham and pineapple...that's what I should have done! I haven't found a thing yet that doesn't go with pineapples. Makes you wonder who said to him/her self one day "Hmm, I wonder what THIS would taste like." At least it makes more sense than bleu cheese. Seriously, that person must have been starving.
I had a 4lb roast thawed but slept too late for slow cooking in the crock pot...so I wound up making enchilada casserole instead. Not exactly Christmasy but, eh, whatever. I won't have to cook again for at least 3 days.
 
Not sure what it will be yet but there will be sketti sauce with meatballs involved. Thawed out the last of my sketti sauce and it is on the stove slowly simmering. Added a can of diced tomatoes with basil, garlic and oregano to take it from two servings to three as the amount was sort of in between. Also added a few more spices to make up for adding the dices tomatoes.

The pasta involved will be either thin sketti or cheese ravioli. If thin sketti I'll probably do a chicken cutlet as chicken parmigiana and keep the meatballs for a sub another time. Shoot, I could do the same if I use the cheese raviolis. ;)

LOL! Really just sort of bored and rambling but I'm rather weird and actually enjoy such dilemmas. ;) Think about it... If you go to a restaurant, where you REALLY like several items, isn't part of the enjoyment the anticipation of what you will finally choose? Obviously I enjoy good food. When it comes to eating I live to eat rather that eating to live. For me pasta is its own food group, including egg noodles. A doctor once told me to quit eating pasta as it had too much sugar. That is odd as I've never seen a basic pasta recipe that included sugar. :dunno:

When I’m in a restaurant with a particular friend, he will order several entrees when he can’t decide on just one. lol.

Pasta flour is quickly converted into simple sugar as it is absorbed by the intestines.

Then I guess I just lucky. ;) Bad cholesterol is quite low and and blood pressure is like 135/90. LOL! Not bad for a 71 year old old fart. ;) I think I'll keep eating my pasta. ;)
 
Spaghetti sauce is on my to do list along with a big batch of black beans. Lots of freezer space even after half a ham, etc. I feel uptight when my freezers "seem" almost empty. I at least need to have a good start on several possible dinners. I like to cook mostly, but especially during football season, I need easy options.

@gimme30, I hear you on blue cheese or any of those moldy kinds. Ham & pineapple are classic to me but not on pizza. Ham yes, pineapple, no. I make an "enchilada casserole" but haven't for a while. What's yours like?

I will admit, I have put it on a peanut butter and jelly sandwich, in place of the jelly. I thought it was good but everyone else thinks I'm nuts.

My enchilada casserole is basic bachelor style...30 count of corn tortillas layered with a "sauce" made from 2 cans cream of chicken, 1 can cream of mushroom, 7oz of green chilis, and a pound of ground beef (sometimes venison, if I have it on hand, but it lends a weird sweetness that doesn't quite work) and 2 pounds of colby jack.
Pretty much nothing like an enchilada but I guess that's why it's called a casserole.😁
 
@gimme30 My enchilada casserole is lame too, more like lasagna. Corn tortillas layered with a mix of cottage & cheddar cheese, black beans, Pace picante sauce & sometimes cooked ground beef. More Pace & cheddar on top. I used to make enchilada sauce but decided it wasn't worth the effort.
 
That sounds fine to me! Except for the cottage cheese part. I might use ricotta instead. Btw pineapple is delicious in cottage cheese.🔥

To be completely honest I am no cook. Some of the dishes you guys have posted look amazing but I don't have the patience to go to such lengths.
Unless we're talking hamburgers. I could (and have) eat them for breakfast. Mmmmm, burgers......
Supposedly the cheeseburger was invented here in Colorado.

I tried to impress a date with my homemade manicotti once. It didn't go well. You're supposed to boil the shells and then stuff them with various cheesy things which sounds simple enough, until you find out wet manicotti shells are as slippery as a freshly waxed dolphin. As soon as my spoonful of mixture touched the shell...Kersploosh! Damn thing would squirt right out of my hand onto the floor.
I wound up taking her out to dinner instead. Yeah, that one got away.
 
Curry, Sweet and sour Chicken stir fry with Noodles for dinner for me and the mrs.

Au gratin potatoes w/ham. Maybe broccoli & carrots, I'm running out of steam. My husband's BD is soon so he thinks he's on a month's worth of birthday dinners out & for me to make...really? That's not it works for my birthday...

Not with Au Gratin taters but scalloped. I'll do a casserole of the stuff with ham steaks on the bottom like a pie crust. When not far from done I'll stir up the taters and add broccoli and then let the top brown.
