What are you cooking?

Ha ha! Scalloped potatoes are even better with cheese & onion white sauce with bits of ham between layers. I skipped veggies on the side, we may go straight to lack of veggie heck, oh no!! I haven't made scalloped potatoes & ham in many years. My husband loves all things with cheese.

Broccoli goes in a different casserole dinner here, but similar. White sauce with cheese, rye bread & broccoli. Try it, you'll like it!
 
Leftovers, but with veggies tonight, broccoli & carrots. I feel healthier already!

I'm soaking black beans to cook tomorrow. I think we're supposed to eat beans on New Years Day for luck & prosperity.

May be a different bean but, when I lived in Ft Worth Texas there was a tradition of Mexican Corn Bread smothered in Pinto Beans. Actually REALLY good stuff.

If you don't know what Mexican Corn Bread is it is corn batter then taco spiced ground beef and then a second layer of corn batter.
 
Having Sirloin Tips and Brussels's Sprouts. Normally I BBQ tips but will do the same way I would do a steak tonight... Well, sort of. ;) The tips will ne done in a pan instead of on my stove top grill as I would do a steak Just seems like it would be a pain to do a bunch of tips on a slotted grill; doable, and I've done in restaurants, but still a bit of a pain.
 
Husband's BD foods have begun as of NY's day. Tacos for Thurs lunch so black bean burritos are too similar. Indian pouch'o'curry for dinner. I hope chickpeas are lucky enough, lol.

Today he ran errands & came home with a Papa Murphy's "take & bake" pepperoni pizza. It's a chain, not bad. We don't have 1 close anymore, so I guess it counts as a "BD treat".

Tomorrow is his actual BD. He keeps changing his mind on what he wants for lunch or dinner. Mexican restaurant, deep dish pizza or what? Brownies were mentioned. But Sat & Sun are football days & I will not be cooking too much. Our Eagles team plays Sun afternoon here so burgers at the "goodbye sports bar" get together with our fan friends. That won't count as special enough. How long will he try to stretch this out?

@jaylach the Mexican cornbread sounds good. I always make corn muffins because I like crispy outsides. We eat pinto beans sometimes, all legumes. Brussels's sprouts are fighting words here. I like them, husband hates them.

To be honest I'm not really a corn bread person but I do like in some cases. If I DO do corn bread for a chili base or whatever I just use a boxed mix, 'Jiffy'. but add an extra egg which makes it more cake like and less grainy. I think my problem with traditional corn bread is the texture as I have no issue with the taste.
 
The greatest breakfast of all this morning ! A fried egg sandwich and a big bowl of oatmeal . Life is good .
I didnt know what to eat today. But now I do. I'm going to have a fried egg sandwich. Thanks for the idea ;)

Oatmeal is the bulk and fill you up stuff and almost anything makes a good topping to offset the blandness . Give that runny egg a test run !
Ya, oatmeal is sort of bland but that can be a good thing as it will take on flavor from just about anything and can be either sweet or savory. Actually I use oatmeal and milk as my 'filler' for meatloaf.
 
It's football Sunday so I need a filling meal to get my energy up. I'll be grilling a Sirloin Strip steak on the outdoor grill in 28 degree weather. I will make real mashed potatoes and a salad. And a nice danish to top off a good meal!

Was going to have sirloin tips again but they are back in the fridge.

It has been well over a year since I've ordered but it is pizza night! :)

Ordered 2 mediums from a chain. One is veggie but different than my normal veggie as it is Mediterranean veggie. The other is a Philly Cheese Steak. Never have done one of their odd pizzas such as this but, at $9.99 USD how bad can it be? ;)
