What are you cooking?

I love steak and Brussel sprouts together. Steak and asparagus is a close second.
I tend to more like green veggies even though I love carrots, peas and spinach.. OK 2 of the last 3 listed are green but I DO also like others.

Baked Acorn Squash baked with butter and brown sugar is just awesome. :) Cut the thing in half and remove the seeds. Fill the cavity with butter and brown sugar and it is awesome. If you decide to try the squash thing bake at 325 for about 45 minutes then go to broil and 'toast' the surface until the sugar/butter mix caramelizes. It is just TOO good! :)

Try taking the baked squash flesh with the butter and brown sugar and purée it, thinning it out with chicken stock and cream. Simmer. It’s a terrific soup.

I like the sound of that. Another soup combo that is seldom seen is cheese and broccoli with a bit of ham or rendered bacon. Diced tomatoes can also be used but I would drain first. If tomatoes are used I would also add basil.

Anyway, I'm soon going to be doing serious slicing and dicing Saturday as a two gallon crock pot will be filled.with sketti sauce. While, if I start early, I can eat the sauce the first day but to finish it takes two days or more. I cook for a day at a slow simmer then put the pot in the fridge and cook again the next day. Any tomato base should be cooked, cooled, and cooked again. The fridge time just seems to change things.

I still have to go through my delivery list in the morning to make sure I have everything I need. I'm pretty sure I'll need to add black olives. I DO have some but not enough for the batch. When I do sketti it is a major thing and loaded. There will also be 3 pounds of meatballs cut in half to avoid the danged things from running away from my fork. ;) When I put together the main parts of the sauce which will, also, include onion, bell peppers. On the second cooking I'll add shrooms.

The above will give me several meals but isn't cheap to do. The real thing is that it is actually pretty cheap. Sure a 2-gallon batch is expensive but gives many meals. I have 2-1-pound bags on my order which will give me a full pizza and 2 calzones. For a grocery deli the raw pizza dough is REALLY good.

Lazy man's dinner tonight.
I nuked a bowl of chili that was in the freezer for 5 months. Tasted just as good as if I just made it. Mmm Mmm.

My sketti sauce plan got set back a day or two. For tonight I have some options. Actually cook a chicken breast with veggies of just be lazy and order a pizza. Right now pizza is winning. ;)

It's Halloween...who wants a to cook on Halloween. So I'm having another Lazy Man dinner. I defrosted American Chop Suey sauce from a month ago. Will cook the pasta elbows fresh; homemade brownies for dessert. After dinner, I will pick out a scary movie to watch and will relax in my recliner with a tall glass of diet coke.

And pizza won for me tonight. Just ordered a large mostly veggie pizza with a couple of sandwiches and a double order of salad. This will do for 4 days which each being 2 slices of pizza, half of a sandwich and half a salad.

When I do pizza this is my normal method. Make one order and make it last 4 days. With the pizza being mostly veggie, and the added salad, it is probably border-line healthy but the sandwich part is probably not so much so. ;) Sandwiches are a chicken parm and an Italian. If you know my food likes this is perfect for me as I like a variety of flavors and textures in my food. Not exactly cheap as today's order cost me ~$60.00 USD but that is just $15,00 per meal which isn't that bad.

Think I'm gonna try something new but not tonight. I have eight limes as I drink a lot of ice water and like some lime in it.

I think that a grilled boneless chicken breast plated on a bed of grilled thin sliced lime could be a winner. Just haven't figured a sauce yet. Some oriental sauces would be good as would Thia or Jamaican Jerk. Could even marinate and cook the chicken in lime juice.

Any thoughts?

Thanks for the reminder about the chicken breast. I was going to make a fried egg sandwich but now I will make grilled chicken breast that I have in the freezer after defrosting it.

Dinner at Fishmanic’s diner:

Also made a side of salted chopped broccoli in butter sauce.
