Satay Meatballs

500gm mince beef or lamb
2 tsp crushed ginger (I use the jar stuff)
1/2 cup bread crumbs
1 egg
1 jar satay sauce
1 medium can of light coconut milk
mushrooms

Mix mince, ginger, bread crumbs and egg in a bowl.

Roll into 16 meat balls

Slice mushrooms.

Fry meatballs in fry pan until brown. Poor in satay sauce, coconut milk and mushrooms.

Simmer for 15 mins, occasionally covering the meatballs.

When meat balls are cooked through, serve with rice.



My mother in law cooks this for us all the time. Its my favourite.
