With all this cycle stuff we are trying to get our heads round we have no intentions of overcrowding the tank anytime soon

Nice call there chocolate delight. The last thing you need right now is fish. If you can find a source of ammonia, you can go along with a fishless cycle and get things just perfect for your future fish. With a pH of 7.6, you should find it fairly easy to establish a cycled tank if you can find that ammonia source.
