I'm assuming everything is ok so far:

Ph 8.0
Ammonia 5 (topped up this afternoon)
Nitriate 1.6
Nitrate 110 (bright red, 110 was top of the colour chart)

I'm using a nutrafin essential mini master test kit

Any comments welcome :)

Looks ok to me. Your going to see the Nitrite climb like crazy now.

Actually as that happens you can cut back the ammonia a little, go to about 3ppm. As you see the Nitrite processing close to 12 hours you can raise the ammonia up to 5ppm again.

Be patient you are getting closer.

Merry Christmas

If you are cycling a new tank then don't worry about testing for nitrate because nitrate test kits will also read nitrite and give you a false reading.

Depending on what you plan on keeping you might want to drop the PH a bit. A PH of 8 is fine for livebearers, rainbows and rift lake cichlids, but most community fishes like it closer to 7. It's not essential to have the PH near 7 and depends on what fish you keep and if they are wild caught or captive bred. Wild caught fishes will need a more precise PH, whereas captive bred stock will be fine with a PH outside their normal range.
If your tap water has a PH of 8 then just leave it be and try to keep fishes that are happy in slightly alkaline water.
