As mentioned above, i would agree with finding someone that fishes as a hobby/sport. They will be used to putting out fish that have taken a hook badly (small fish swollowing huge boilies normally) or crayfish/other waterway nasties. Im in the process of starting a tank as a hobby, and hope never to do this, but whatever way it is, it has to be quick.

Use a scalpel to sever the spinal chord and then pith the brain, certainly the most humane and the quickest way.

thanks again for all your advice and support guys its really appreciated..
i sincerely hope i never have to do that again as it wasn't a nice thing to have to do but one i hope was the right thing to do and that he didn't suffer none.

*hugs* I'm sure it felt nothing. The clove oil would have just made the fishy go to sleep and then die. No pain, no suffering, just going to sleep and not waking up, like it should be for everyone
