Once your tank is established and you have fish happily living inside how often or is it necessary at all to check the ammonia, nitrites, and nitrates.
 
Depends on how good you are at recognising signs of deteriorating water quality and your own confidence.

I test our ADF tank for ammonia every week with liquid tests as their food is left on the bottom for them to hunt so I need to know if there's any spikes before doing the weekly water change (so I know the filters running fine).

The ACF/Platy tank never gets tested unless there's signs of a problem.

My marine tank (when up and running) will be tested daily with strips and weekly with liquid tests for everything as I did with my last marine tank.
 
Every few days or so for me since its a newish tank and every 3-4 days I seem to find a dead fish on the filter ( mostly platy for some reason ) but I also do it weekly before/after water changes
