Depends on your stocking, Filtration and water stats.

But in General I think 10-20% Weekly is perfectly adiquate

But err on the plus side – as no fish ever died from too much in the way of water changes...

Does depend on your fish though - if you have goldfish they are very messy.

One of the ways it depends on water stats is that if you have any poor stats coming in via your source water, you can use smaller but more frequent water changes to dilute the effect of the incoming minor problem (eg. a common one is nitrate coming in at 30 or 40 instead of zero.) If the source water is free of any problems like this then you can choose a more normal schedule like 25%, 20% etc. once a week.
