Upgrading-Does This Plan Sound Ok?

I have 3 tanks
1 25l cycled tank with endlers in
2 25l tank kept cycled with ammonia since betta died
3 60l new tank
I want to buy 3 honey gouramis and keep them in the old betta tank for quarantine. Get 4 trilineatus cories and set them up in the new tank with media from current tanks. Leave endlers where they are. After 6-8 weeks, move gouramis and endlers and all their media into the 60l with the cories.
Keep the old betta tank for q of future additions.
Sound like a plan?

So in the 60 liter you would have
3 x Honey Gourami
? x Endlers
4 x Trilneatus Corydora?

I would do 1 more cory and make it either all female gourami or 1 male + 2 female, but not 100% how three will work in there, is it a cube tank or rectangular?

It's the horizon 60, so rectangular. I had asked about the trilineatus before and opinion was 4 would be OK on the 30x60cm footprint.
There will be 7 endlers. I had thought from my reading that it's very hard to sex honeys unless they are the wild colouration? I have seen some yellow with red edging to the fins in my LFS, which I presume are a bred colour morph. I haven't been able to find any info on suitable numbers to keep together anywhere. Is it a fish where the male will harass the females, so there needs to be more females to spread that around?

You know, I'm thinking maybe 3 male platies rather than the gouramis-hmmm...
