Those are aquatic plants out of the water!? They look beautiful! I wonder how they just adapted to terrestrial life so quickly...
Most plants used in the hobby are not 100% aquatic. Most live in flood plains. So for part of the year they are completely submerged. At other times they they are well above water level. Rarely are they under water for more than a year but they can tolerate that without any issues. As long as the ground doesn't dry out they will survive. Most will only flower and seed when the flower is above water level.

That is true! There us an area in the world that is between mountains and has a lake in the center. For two weeks out of a year heavy rains make the lake rise imbetween the mountains covering a small park and trail with all the spring plants still intact. People go there to dive down and look at the beautiful underwater views for those two weeks...
 
You have REALLY cool summers. Even a few degrees cooler than San Francisco's summers. The plants don't seem to care..looking good!
