This PDF from Penn State says that distillation removes nitrate, I think that would be at least enough to see that if the test was still coming up with 40-80 nitrate instead of a number at least a little less than that, that something is wrong with the test and not necessarily with the water.

Am going to get some RO, some bottled water and test it and go from there!
