And a Nitrate probe around £150 sh although this can go to £500

Unless you have a planted tank or a salt water tank, there's no reason to justify buying either a digital pH meter or Nitrate meter. In a planted tank, people who use pressurized CO2 systems use pH probes to make sure the pH is maintained at the proper levels. In salt water tanks, people use RO/DI water and need to make sure the pH is adjusted properly before using it their main tanks.
In a regular freshwater tank, a person who maintains their tank well will rarely ever have to worry about nitrate issues. pH will never change, unless the water supply company has made a change, which the consumer is normally notified of any changes.
