I have a 40 gallon with two orandas and a ping pong fish, the levels started to rise when I took out some cycled media I had put in for my new betta, I was wondering if the betta (female) can live with the goldfish for the time it takes for my tank to cycle (about two weeks, with safe start I added) and I can re add the media for the fish to be safe, I was wondering if the fish will be ok together?

No, bettas and goldfish are not compatible. First, betta is smaller than the goldfish, second, bettas are tropical fish and therefore need warmer water than goldfish. Another reason is, bettas need a heater and in colder temperatures betta's metabolism will be low and it will get sick and die.

Agree, no. However, all is not lost. If you used SafeStart, and with one Betta in the tank, you are not going to have cycling issues.

it’s the goldfish tank that has the cycling issue, the betta/betta tank has the cycled media

If you used SafeStart in the 40g, that's all. Monitor ammonia and nitrite. Assuming the goldfish are small, you may be OK.
