Okay so my Emperor 400B has three filters...1) biological, 2) chemical, 3) biowheel.

Do I need to put AMMO-Carb in the second stage filter or should I use something else? My understanding is that the beneficial bacteria feeds on ammonia and turns it into nitrates. Does using the AMMO-Carb remove all the ammonia thereby starving off the bacteria? Or am I off base here?
 
You're right except the nitrifying bacteria turns ammonia into nitrite then nitrate.

You shouldn't need ammo-carb in an established tank if the filters are working correctly and you aren't extremely overstocked.

I use filter floss in all 4 of mine.
