i did have a large'ish apple snail. he would do lap after lap of my tank on the glass munching away merrily. today, i found him deceased, well more like consumed  his shell is empty, 'cept for what appears to my bad eyes to be eggs, and his shellis now a pale brown colour. where he used to live is a clear jelly like substance with what appears to be small round things in it[eggs?].
so a quick game of cluedo is needed..............'who dunnit' the suspects are....2 female bristle nose plec, 2 corys[unsexed],a butterfly fish[with a liking for guppy's  ] and mixed tetra's[neons, rummys etc], 2 dwearf cichlids, and 4 rosy tetra's. he was found in the gravel cave i created under the bogwood, there is a large hole through said bogwood. the plecs and corys live in it mainly.

mick.

any fish will eat a dead snail, they all think dead snail is a delicious for some reason.

i would check wether apple snails do actually lay eggs and if they do, check the hatching time. if its a reasonably short time (no more than 3 days) wait to see if anything changes and, should it not, proceed to remove the remains as they're not going to do any good to the water.

apple snails like mystery snails have very easy to spot eggs. they are usually just below the lid of the fish tank. if there is nothing there. then your snail did not lay eggs.
the dead snail in the tank is likely just that dead, just remove him and throw him out.

An apple snail or mystery snail will lay a clutch of eggs in a large mass above the water line. Any eggs from the snail that become submerged will drown. You do not have any eggs laid by the snail itself.
