Stress bars are not caused just by stress there are a number of reasons why a fish might show them - asserting dominance in a tank or showing sumbission in a tank - sometimes its to highlight their territory - sometimes they are hungry other times they are full etc lots or reasons why they show up only when they are jet black and the fish is bottom sitting with clamped fins is it likely to be serious stress reasons, like serious injury, bad water etc.

Is it the same with oscars?
My oscar colors get really bright when I feed him in the morning, in the evening he looks a bit faded out and whitish, then in the morning hes fine again, is this to do with him getting sleepy in the evening?
