What is this plant?

Hey guys I'm new to the world of aquarium plants so I just bought a few bulbs to put in my bettas tank. This one has taken off! It has about two new shoots everyday and just stretches towards the light then develops a little leaf that floats on top.
I'd like to research more about it but cant find it on any plant list. Thanks in advance!

A photo of the leaf floating on the surface (taken from overhead) might help. Did the store have no name, even if a common one, for these bulbs?
 
It has the appereance and growth of dwarf aquarium lily , but the leaves are a weird shape, Iā€™m thinking itā€™s a very stretched Apongeton.

They were in a 3 pack simply labeled betta bulbs. The other one that bloomed is completely different and the 3rd did not bloom.
