Hi all
I, like many others here, have just fed some raw potato to my plecs; however it has got me wondering what the effect of
starch has on water chemistry, if any.

has there been a study on this somewhere?

from my own experiance there seems to be no significant effect, IE ph,gh etc stays the same.
but what about things the average fishkeeper cant test,like the effect of starch on the nitryfying bacteria or other microbes,
or the rate of ion exchange or any number of other questions.

Potato starch contains high amounts of phosphate which may or may not become released into the water, I doubt it would have much other significant effect. In a large tank, as an occasional treat in small quantities, it should not be noticeable in any way.
