Water Test Reading

I'm getting really confused with my water test readings, i'm currently doing a Fish-in cycle and am testing my water twice daily, i done a reading this moring and my readings were:-

Ph 7.4
Ammonia 0 (woo hoo)
NitrAte 2.5(approx)
NitrIte 0.25,

I done a 50% water change, left it for 90 minutes and taken another reading and it's exactly the same,

I have a 110 ltr tank with 15 small fish, 12 live plants and 5 moss balls, i've had my tank for 3 weeks and know that it is overstocked for a tank as young as mine but i'm sticking with all the water changes.

I only feed my fish once a day, and it's just enough for them to eat, i don't get a lot of food falling to the bottom of the tank and they comsume the food within a minute or so.

Should i be doing larger water changes more often?

Any help would be appreciated,

Yes, do another water change and test the water again and see if the nitrite level goes down at all. If they do not go down, I would check your tap water and see if there are any nitrites in your tap water. Check the water 15 minutes after you do the water change this time. Then you will now for sure if the you are removing any nitrites/nitrates or not, and it's just not your beneficial bacteria turning the ammonia into nitrite and nitrate.
