I have a lot (quite a lot) of water collecting on the top of the top of the tank, it is running at 28 degrees and has the light attached to it. The main issue is that when I move the cover to feed the fish, the water falls off it and onto the floor (the back end of the canopy)

I am guessing it is evaporation or something, is there any way to avoid this?

Yes, its likely to be condensation that has built up due to the moisture, heat and flow of the water, especially if you have air bubbles happening with an airstone or from the filter.

The same thing happens to my tank canopy as well, I get used to it and lift the lid in a certain way to ensure the water falls into the tank rather than the sides of the tank whihc is annoying, especially down the back glass where i cant get to it!

I am not actually sure if there is any way to avoid this, its not something I have actually looked up or asked to be honest.
