I have had a few tanks without coverglass but they were mainly plant tanks and I dropped the water level down 4 inches and put a wooden frame around the top to stop the fish going AWOL.

In general a coverglass is essential for most if not all aquariums.
They stop fish jumping out.
Trap moisture and reduce mould infestations.
Trap heat to reduce power consumption.
Stop foreign debris and objects getting into the tank.
Reduce evaporation.
Stop kids putting fingers in tanks and getting bitten by sharks. True story by the way, and rather amusing too :)

all my betta tanks are lidless. pros. plants can grow tall, plants can have root exposure, evaporation, why? I can top water off and trick myself into thinking the water is cleaner. cons. jumpers, can rust up metal shelves.
