Sturgeon Cavier

i'm watching saturday kitchen on telly and they're talking about all the difference caviers.
one thing they said i can't get my head round, they had the regular black sturgeon cavier, and some clear/white cavier they said came from albino sturgeon, would albino/white sturgeon REALLY produce clear/white fish eggs as opposed to the regular black. or have the marketing people who sell this cavier hit on a fantastic marketing scam, seeing as this cavier would cost like £80 a small jar or something.

but not all is as it seems, as some American farmers, produce white caviare, that i beliave is from the white sturgeon, so telling the difference could be a problem.

must admit i never saw why this stuff is so expensive, though the taste is ok, it really is only the stupid rich and the terminally snobbish who care. what's the point of eating something just because it is rare, and that is all caviare eaters do, i feel the poor fish should be left alone, let the rich twits and the dim wits find something else to show off with.
