Would 2 red juwel cichlids and a bristle nose plec be ok in a rio 125?

I can't see why not the plec and cichlids only get to around 5 inches so that should be fine. Even though iv seen that they need 30 gallon minimum but 125 litres is just under 28 gal. Not much difference

I feel I should warn you that jewel cichlids are one the most aggressive of all fish; I wouldn't be at all surprised if you end up with one of them after it's killed the other, and the BN; every single jewel I've ever known has ended up on it's own...unless one of a mated pair and then you'd need to start off with 5 or 6 juveniles an let them pair up (at least you won't have to worry about rehoming the others )

This is a bit harsh on Jewel cichlids to say the least. One of the most aggressive of all fish, really? Undoubtably you'll get the odd totally obnixious individual, but overall they cohabit well most other fish, including cichlids of equal/greater size and they all but completely ignore catfish.

Well, all the ones (three ) I've ever come across have been nutters, although, to be fair, they've all been dumped on me for killing their tankmates, so maybe I've only seen the worst of them!

so you would recommend its ok, well i think that's the plan then, any ideas on tank layout, lots of caves i take it?
