I have some that should be arriving soon, so they should take care of everything and once I'm reading 0 and 0 I should be okay to put fish in?

Wait until both ammonia & nitrite are zero and the plants show signs that they are growing. Plants take a while to settle in and you need to wait until you are certain they are OK and not about to die before getting fish. But it's still a lot faster than cycling with ammonia.
