my powder blue dwarf gourami was up at the surface last night, when suddenly he spat 3 or 4 mouthfuls of water up in the air, just like an archer fish!

anyone seen this before? any idea what it was trying to do?

Yep, they are known to do this. They try to get bugs and such. At least that's what my book says. Most common with gourami like moonlight,pearl and other ones that their mouth kind of goes up like they have their jaw out. (if fish had jaws)
 
My dwarf gourami does this too. I've got him trained now - when I hold my finger above the water, he'll spit at it several times, and then he gets fed. :p It's a pretty neat trick if you ask me. Glad to hear you got to see it!! :D
