pH is above 7.0, overall hardness is 253ppm.

OK, that's good. A GH below around 12 dGH (215 ppm) wold cause issues for mollies, as would an acidic pH. These at best would weaken the fish making it susceptible to other issues (like the disease here, or whatever). But the GH and pH are fine, so no problems from that aspect.

So what's with the gasping? Skinniness? They do beg and eat fine, they will nibble on things too...
I'm just so confused..

I've no idea, I leave disease issues to those with far more experience than I have with this. I just wanted to get one possible factor out of the way.
