Shalom,

I have a 240 Litre tank and currently have 8 Tiger Barbs and 5 Cherry Barbs lively happily together.
I know there is a rule for stocking - 1.5 inch per US Gallon.

If I find the adult sizes of the fish I want and the fish I have now and use that measurement, could I use that rule to see how many fish I can get???

yes but i would stick to 1" per us gallon to start with and increase as the months go by
 
agree with truck, I'd stick with the 1" guideline for now and remember that its still a great idea to run your ideas by the members prior to adding fish as some of them may think of things that you haven't. Note that the stocking advice is a very rough guideline and we try not to call it a rule. There are all sorts of exceptions to and problems with it but its still a good starting point for beginners. Overstocking is a tricky thing because you can slowly creep upward with the number of fish, with everything seeming all right and then suddenly you can lose a lot of fish.

remeber the tiger barbs will attack anything with a medium to large fin
