Okay Stocking For 12 Gal?

I have a male betta and 12 pygmy cory, plus a few small pond snails and a Malaysian trumpet snail.

Today a bought 2 apple snails. Is this too much now?

And also, those apple snails poop like there's no tomorrow Dx
 
I think you're good.  You can probably add a bit more, but I personally wouldn't add anything else -- especially not any more apple snails (which grow quite large).
 
In all truth, if you don't mind doing large, frequent water changes or can set up an overflow system to automatically and constantly add fresh water to the tank, the sky's the limit.
 
If you really want to test your stocking, measure your Nitrates at the same time each week just prior to your water change.
 
IMO, +10 ppm Nitrate per week is "fully stocked", because at that rate, a weekly water change of at least 25% is necessary to maintain nitrate levels <40 ppm.

My nitrates tend to be 5 or 10ppm, it's hard to tell. 
 
But I won't add anything else to be safe :)
