Yes, it's possible they could have. But I think it's more likely the book is wrong.

Balloon Mollies take more then a year to reach full size too...at 1 they are mature, not full grown.

It isn't that they are doubling in size, it is that the book you are basing your answers off of is outdated. Big time. Unless it talk about a proper fishless nitrogen cycle, and has CORRECT information about the size of fish, I wouldn't trust that book as far as I could throw it.

And the lifespan of mollies is about 2 years. Your mollies have not overcome a huge obstacle. But of course, you knew thst already.
