Here is a recipe for a rum cake that our family enjoys very much. I usually only make this for birthdays or special ocassions:

Cake:

1 C nuts
1 yellow cake mix
1 small instant vanilla pudding
½ C cold water
½ C rum (80 proof dark)
4 eggs
½ C oil

Preheat oven to 325°. Grease and flour 12 C bundt pan. Sprinkle nuts over the bottom of pan. Mix batter and pour over nuts. Bake for one hour. Invert over plate.

Glaze:

¼ lb butter
¼ C water
1 C sugar
½ C rum

Melt butter, stir in water and sugar. Boil for five minutes, stirring constantly. Remove from heat. Stir in rum. Prick top of cake. Drizzle and smooth glaze over top and sides. Let absorb. Repeat until all glaze is on cake.
