Help Shrimp Are Dying

What is the pH in your tank, and what is the pH of your tapwater? If your city's water is low in dissolved minerals the pH can crash in your tank which could kill your fish (shrimp). Shrimp need dissolved minerals in the water to be able to build their protective shells, so when they molt, when your pH is low, they are very vulnerable to that. You can add crushed coral to your filter, it will slowly and safely raise the dissolved minerals and the pH. 
 
I'm not sure if it is save to add baking-soda as a quick fix, I will let someone else comment on this. You definitely need to know first if in fact your pH and low dissolved minerals is the problem in your tank.
 
The other thought I had was since you have plants, do you fertilize them with a product that contains copper? Copper is toxic to shrimp, though I don't know what amount would make it unsafe to use in shrimp tanks!
