Has My Cycle Stalled, Please Help

am i doing my cycle wrong. my tank recovered after the water change but think it has stalled again. today after 12 hours it has not cleared all the ammonia but there is no nitrite. i check it at 8 am, if no ammonia and nitrite i bring it back uo to 4-5ppm, then check it at 8pm and if its all cleared i add more again. i seen someone else cycle there tank and they check it at 7am and got 0 and 0 ppm's but waited another 12 hours and did another test and added more ammonia, then tested again after 12 hours and got 0 and 0 but them waited a further 12 hours to do another test and add ammonia.
please help

i have added some bicarb to raise the ph and see if that clears it. once my fishless cycle is complete and i stop adding bicarb will the ph go to low and stop the tank making bacteria and stop processing ammonia or is this just because i am adding so much ammonia. my usual ph is quite high
