What kinds of foods can you feed bettas? I know that they like a variety. As of now I only have pellets.

I feed mine a mix of pellets, bloodworms, flakes even though they are for my other fish, ghost shrimp fry after a females lets the eggs go, brine shrimp, and I think that is it for me :S

Heard of people feeding them other things but I want to raise Daphnias for them sometimes in the future

Mine has a taste of the fish flakes but is not overly fussed by them, he much prefers his micro pellets, live mozzie wrigglers, defrosted blood worms he eats but not overly fussed, he enjoyed his defrosted and rinsed brine shrimp, my old one used to eat newly born guppy fry and my new boy I am sure has been feasting on my baby cherry shrimp. A fighter I had years ago was also partial to ants eggs. So yes a varied diet is best for them but then I try to give all my pets and myself variety who wants to eat the same thing day in and day out forever?.

I fed my betta bloodworms, flakes, and the pellets and he spit out everything but the pellets. He spit out some remnants of the pellet as well.

Is this normal?

I've heard of some being very fussy! How long have you had him? Mine get betta flakes and pellets, frozen bloodworm and tropical quartet, plus live bbs and daphnia. The bettas in the community tank also eat the normal tropical flakes plus love a good nibble on the plecos algae wafers! :D

If you've only had him for a day, be patient, be careful not to overfeed. There's no harm in fasting for a day and trying a new food. Mine took a long time to come around to any other food but flake that he had been getting in the shop. His fave by far is now bloodworms, live or frozen, and a high quality pellet. I also try other frozen foods for variety, but bloodworm and pellets are his staple diet. I don't bother with flake anymore.

I agree with soybean. They can sometimes take a few days to settle in a new home, and they don't appear to be eating. I'm sure that once your new addition is settled he will eat just fine!
