How many females should I have to go with my one male guppy if I want them to breed?

Minimum is one. After that it is up to you. A single male can easily keep a half dozen females busy dropping fry.
 
A single male will easily annoy just one females as their constantly on the case.

You should have at least to females to each male to reduce the stress factor from these males.

Another question:
I also have a breeding pair of swordtails and as you say, the male is seriously harrassing the female. Would it be bad if, instead of buying a new female to accompany the old one, I just kept one of their daughters? Would it be bad if the male and his daughter bred?

No problem.... provided the "daughter" is mature....(& I'll get yet another female if it was me)..... my formulae is one male to at least 3 females in all livebearers....
