It depends on how big your filter for the 5 gallon is. If its rather small and can't fit much, then you can take out the supplied media and replace it with media from your 55. Bear in mind that you don't need carbon (just in case you have that in your tank).
I would personally test to see if the media has instantly cycled the tank. Add about 3 ppm ammonia and see how fast that's processed. If its processed in 12-24 hours then its safe to buy a Betta

Okay, it'll be pretty small I imagine then. I'd say you'd even be fine adding a Betta tomorrow when you bring your tank home. Just make sure that the water is at the right temperature.
 
Oh, also, get some Indian Almond Leaves at your LFS while you're there. Bettas love them.

How many you would need depends on how big they are. 
If they're rather large then you could cut them in half and put one in every 2 or so weeks (replacing them each time). 
The IAL will stain the water a slight tea colour so bear that in mind when adding them.
