when redosing, you want to lower it a bit. 2-3ppm.
 
Yep, waiting till 0 ppm is best for clear records. The bacteria won't starve if they don't have any ammonia till you get home tomorrow. Once all ammonia is processed within 12 hours, you will still need to top it up only once every 24 hours.
 
and just keep going until ammonia and nitrite drop to zero within 12 hrs right????
 
Yep, after they both drop to 0 ppm within 12 hours of top-up, you need to watch them do that for 7 days in a row. When that happens, your "qualifying week" is over and you can do a 100% waterchange with dechlorinated water, then get some fish on the same day.

Redosed this morning at 0. When redosing I "overdosed" ie put in 8ppm of Ammonia did a small water change which took it down to 2-3ppm, is this ok??

Yes, that's right: 8 ppm of ammonia would encourage the wrong bacteria to grow, so you were right to reduce it with a water change. Did you remember to dechlorinate?
 
No I didnt dechlorinate, could this be a problem? I changed 20 litres out of 180 litres

20 litres out of 180 won't make much of a difference, but next time dechlorinate.

Also, changing 20 litres would drop 8 ppm of ammonia to 7 ppm, in a tank that size.

might not have been 8 but somewhere between 4 and 8 as 4 and 8 are the only indicators on my api test kit.
It has just occured to me that I may have made a very silly mistake. I have a lot of rock in the tank which is taking up water volume so i may not have anywhere near 180 litres of water in the tank.
That is why im overdosing.

ok thanks for your help looks like im gonna have to do a bit of guess work. What are the limits max/min for ammonia redosing??
