Would it be a good idea I can't fit a 30 long but I can fit a 30 gallon high in my room.

It can be done. A taller tank takes a bit more time to clean because it can be hard to reach the substrate but the fish and plants thrive in such a tank.

It depends on the plants you want to grow. I have a very deep 45 gallon tank where I grow a beautiful Anubias with decent lighting. It even flowers for me.

As Oldman47 mentioned, a high tank could need adapted lighting, especially when growing certain plants.

Only 73% of light makes it past the water surface, and only around 45% makes it to 1m deep.
If your aquarium would be say 0.8m deep instead of 0.5m; you could be looking at a 20% lowering of light levels at the bottom!

This is even more true for the red part of the spectrum (which plants like best).

Also, its harder for enough oxygen to mix with the water, as you have more water volume for less water surface.
This is also the reason why a fishbowl should never be filled to the brim, as if one should ever get one
