Once I get rid of all of all my female guppies, I will have an empty tank. I plan on switching it back to freshwater once they are gone. I want the tank to have a single fish. I know I could probably do a goldfish (as long as I keep on top of the water, thinking 50 percent change 3 times a week), which would be fun. What are my other options? I am willing to soften with distilled water or harden with buffering salts as necessary. Ideas?

A single dwarf gourami would do amazing in a 20 gallon tank. I believe they can grow up to 3 inches and there are several color morphs to choose from. You could even do a pair of them if you really wanted, but I would avoid having two males because they may fight.

One goldfish is fine in a 20G but they really need a companion goldfish so that would be 30G.

It is a 20 high. Maybe I will wait until I can get a bigger one, or swap my 20 for a 30 if one comes up cheap.
