As in, if I tie moss to the base of a branch, will it eventually grow over the whole tree without needing more thread and fill over the other branches?

It will cover the branch, if its in good conditions it will do it quite quickly too, if in low tech conditions it will take a lot longer, best thing is to add quite a bit too all branches and sell the trimmings. :)

Thanks. I have a new piece of wood in there which is still maturing. It's new so it's still growing some white fungus over it. I've read this is fairly harmless. But if I attached java moss over it, will the moss like it as food or will the moss die?

And if I attach moss to the upper part of branch, will it grow downwards as well and cover its way towards the branch below?

The fungus shouldn't affect the moss. Noone really seems to know what the fungus is or why it grows at the start, but in my experience it's totally harmless.
Moss will only spread very slowly. The best way to cover the wood if you want it all to be covered in moss is to use what you have more thinly and cover everything. Then once it thickens out, it will have covered all of the wood and you won't need to wait for it to spread. It will be much quicker to cover the wood that way.
