Currently have a 330 litre community tank however the current inhabitants are incompatible for any fighter additions, I have a spare 125 litre currently unused so want to turn this into a tank to house a Siamese fighter , what other tank mates should I add? It will be sand substrate with the possibilty of compost underneath , planted heavily, would shrimp work here too?

Adding shrimp with a betta is a huge gamble. My male betta would not tolerate shrimp and killed them.

I've heard that cories and otocinclus are normally accepted by bettas (but again, each betta is different and there may be some who just won't accept any tankmates at all).

You'll want something small, peaceful and not nippy. A largeish shoal of some type of microrasbora would look great, with the fighter and a few shrimp. One shoal of one species will provide more impact than lots of different fish, IMO, and makes the fighter the focus. Always love seeing people plan nice big betta homes!

Amano shrimp grow quite large and have a bit of character, mine can stand up to a fighter no problem. My cherry shrimp got pecked at a bit. Really depends on the betta.

One thing tho - make it all sand, as sand always mixes with other substrates, including compost. Plants will still grow fine - use root tabs and/or liquid ferts.

My boy has some Zebra Danios and Cherry Shrimp for mates. He tolerates them all. He does go looking at the Shrimp, but never ate any so far.

Betta's are very hardy fish and require alot of efort to keep. They often should not be kept with anyother fish due to their aggression.

Bit of a contradiction there?

Very clean water, a few plants to rest on, gentle filtration and a varied diet = happy bettas. Simple.

Aggression varies. I've kept them with other fish with no problems, and I've kept some that didn't even like people walking past the tank. You just can't generalise with them. You don't know how they'll react until you try.

Okay so here's what I'm thinking , 125 litre tank , all sand substrate, gentle filtration, with large shoal of cardinals, plants and a rock cave, this be okay???

How about a shoal of Green Neons? they are great with my bettas, also have Pygmy cories with mine :good:

Shrimp as said are a hit and miss, my smallest female tore an adult cherry to bits in seconds
