I'm thinking of purchasing two of these fish. I have a great quantity of topfin betta pellets leftover from my pet betta. I know the two species are related; do you think gouramis would eat betta pellets?

Yep, they'd be happy with them. However, dwarf gouramies are fragile fish - make sure your tank's cycled. Also, getting two is a bad idea - either go for a single male or a trio (1 male, 2 females() if you have at least a 15 gallon tank.

How come you need two females? I've recently got a male and a female -_-

Mature males start chasing the females around - the more they chase, the more stressed the female. In fish like dwarfs, this can lead to death as a result of disease induced by stress. This extremely common. By keeping at least 2 females per male, his attention is divided and no single female is constantly harassed - reducing stress.
