What fish off this list can I have in a 75 gallon peaceful community?

don't mix dwarf cichild with cory/pleco; if you insist on mixing them only pick one species and i personally would go with borelli for a number of reasons including adapatability to different type of waters/temp and not quite as badly inbred as cockatoo and most docile of the species you mentioned.

Generally avoid domestic dwarf gourami (wild caught are fine but they won't have the strong colours most people want).

Other than that i don't see any major issues.

To expand on the dwarf gourami issue for the OP. Because of overbreeding, dwarf gourami are lousy with Iridovirus. Which is 100% fatal and can't be treated.
