Thanks for that advice. I did not realise that there might already be nitrates in the tap water so I'll go and test it.

How would I get rid of the nitrates out of the tap water if there is any?

I would not worry to much about nitrate content in your tap water. The aim is to try and not let your tank water nitrates to get 15-20ppm above the taps content. These guide lines act as a good indicator for when a water change is due.

I think I need to keep doing frequent water changes as I've just tested the water again an the nitrites are not perfect and this is really important isn't it.

Agree, want to be seeing 0ppm for nitrites. This could be down to your filter not being able to cope with the tanks bio load. What fish do you have in your tank(quantity/species)?
 
edit: deleted after reading skins' post above ... i was confused how a 2 year old "cycled" tank can read nitrites but i suppose under-filtration makes sense...
 
I think the tank is a bit overstocked too as I inherited 17 fish with it. I haven't done the calculations yet but it seems a lot for a 94l tank.
